Green Chutney or Coriander Chutney is a frequently made recipe in many Indian households and is a great accompaniment/dip for various snacks - hot or dry. It is used in Bhel or as dip for other snacks such as Dhokla, Bread Rolls, etc. One such variation is making Green Chutney using plain sev (thick or fine version) and it tastes absolutely delicious.

Ingredients:
1 small size onion - roughly chopped
1/2 - 1 inch ginger piece
3-4 green chillies
1/2 cup plain sev
2 cups cleaned & washed fresh coriander leaves - roughly chopped
Water as needed
salt to taste

Serves: Makes about 1 cup

Method:
1. In a mixer grinding jar, add onion, ginger & green chillies.
2. Cover with jar lid and grind it coarsely.
3. Now add sev to the mixture, cover with lid and grind again.
4. Stir it with a spoon.
5. Add coriander leaves, about 4 tbsp of water (or as needed) & salt to taste.
6. Cover with lid and grind it to a smooth paste.
7. Transfer it in a air-tight container or a serving bowl and add lemon juice. Mix well.
8. Store it in refrigerator. Consume it within a week.
