Paneer Tikka is a famous Tandoori Snack and also served as starter in marriage functions and restaurants. This delicious Snack is made by marinating Paneer (Cottage Cheese Cubes) and then roasting them. Traditionally Paneer Tikka is cooked by hanging it on skewers and roasting on Tandoor Fire. We can make this at home by using a Pan or Grill or even Oven. It tastes equally well. It is usually served with loads of onions sliced and separated as rings and sprinkled with Chaat Masala and Lemon juice and served with Mint Chutney. Do try this easy recipe at home!

Ingredients:
1" Ginger Roughly Chopped
4 Garlic Cloves
2 Tbsp Coriander Leaves
2-3 Green Chillies
2 Green Cardamom (only seeds required) (Elaichi Dana)
2 Tbsp Cashewnuts
1 Tsp Cumin Seeds (Jeera)
2 Tbsp Thick Yoghurt
4 Tbsp Thick Fresh Cream/Malai
4 Tbsp Lightly Dry Roasted Gram Flour (Besan) until Fragrant (should not change colour)
1 Tsp Salt
1/4 Tsp Red Chilli Powder
1/4 Tsp Chaat Masala
1/4 Tsp Garam Masala
1-2 Tbsp Freshly Chopped Mint Leaves
1 Tbsp Lemon Juice
1-2 Pinch Orange Food Colour (Optional)
200 Gm Paneer Cut in to 9 Cubes
9-10 Pieces Diced Onions
9-10 Pieces Diced Capsicum
2 Tbsp Oil for frying
9 Toothpicks
Serving Suggestion: Serve with Sliced Onion sprinkled with Chaat Masala and Lemon along with Mint Chutney
Serves: Makes 9 Paneer Tikka Pieces
Preparation time: 20-25 min
Marination time: 1 hour
Cooking time: 10-15 min
* 1 Cup = 237 ml
Method:
1. In a mixer jar grind Ginger roughly chopped, Garlic Cloves, Coriander Leaves, Green Chillies, Seeds of Green Cardamom/Elachi, Cashewnuts, Cumin Seeds/Jeera to a smooth paste using very little water. Check the consistency - it should be thick paste. Keep it aside.
2. For marination in a large bowl add Thick Yoghurt, Thick Fresh Cream/Malai and whisk until smooth & lump free.
3. Add the prepared paste (in Step 1), Lightly Dry Roasted Gram Flour/Besan and Mix everything well. Make sure there are no lumps.
4. Now add Salt, Red Chilli Powder, Chaat Masala, Garam Masala, Freshly Chopped Mint Leaves, Lemon Juice, Orange Food Color (optional) (You can also use Turmeric Powder as well instead of Orange Food Colour) and Mix well.
5. Now Paneer cubes and Mix well with light hands. Add Diced Onion, Diced Capsicum and Mix gently without breaking Paneer & vegetables. Cover & refrigerate at least for 1 hour or max for 8 hours
6. To make Tikka, heat 1 Tbsp Oil in a flat pan or a grill pan. First saute marinated Paneer pieces on medium to low flame for 5-7 mins. Flip & cook on all side till golden in color. Remove the Cooked Paneer on a plate.
7. Now saute Onion & Capsicum in the same pan. Add about 1 Tbsp Oil & cook for 5-7 mins till golden & crispy.
8. Remove the cooked Onion & Capsicum on the plate as well.
9. Arrange a piece of Capsicum, Onion & Paneer piece on a toothpick.
10. Prepare all the Paneer Tikkas in the same way.
11. Serve immediately with sliced Onion & lemon wedges and Mint Chutney.
