Dry Fruits Basundi is a Indian Sweet dish made using milk slowly cooked till thick. Basundi is usually made in Gujarat, Maharashtra and Karnataka and is often flavoured with fruits or dry fruits. It can be prepared for any festival like Janmashtami, Rakshabandan, Diwali, New Year or any special occasions. In this recipe dry fruits and saffron is used to give a rich taste and flavours to Basundi. This recipe is very easy to make. INGREDIENTS:
1 Litre Full Fat Milk
Dry Fruits Powder (grind 5 Cashew Nuts, 5 Almonds and 8 Pistachios)
12-15 Saffron Strands
1/8 Tsp Nutmeg Powder
1/4 Tsp Cardamon Powder
1/3 Cup Sugar
Clipping of 10 Pistachios, 6 Cashew Nuts and 6 Almonds
Ghee for greasing
SERVES: Makes 800ml Basundi approx
PREPARATION TIME: 10 Min
COOKING TIME: 32 Min
TOTAL TIME: 42 Min
* 1 CUP = 240 ML
METHOD:
1. Grease pan with Ghee to avoid milk burning & sticking to the bottom.
2. Add milk & allow it to come to boil on high flame.
3. Lower the flame & add dry fruit powder, saffron, nutmeg powder & cardamon powder.
4. Cook for 30 mins on low flame till milk thickens, stirring in between and scraping the sides of pan.
5. After 30 mins, add 1/3 cup sugar and cook for 2-3 min.
6. Switch off flame and take out basundi in a bowl and allow to cool down.
7. Once cool blend the basundi using a whisker or blender to get smooth consistency.
8. Add clipping of 10 pistachios, 6 cashew nuts and 6 almonds.
9. Refrigerate for 4-5 hours and serve chilled.
