Khajur Imli ki Chutney is a sweet & tangy chutney made from dates & tamarind along with jaggery (gud). It is also called sweet chutney or saunth chutney or imli ki chutney. It is used to make chaat items like bhel puri, pani puri, papdi chaat & also used as accompaniments in place of sauce as in samosas, kachori, etc. It is very easy to make at home & requires very little cooking. Store this chutney in air tight container for 1 month in fridge or up to 6 months in freezer. If you store it in freezer only thaw the required quantity before using. Do try today.

INGREDIENTS:
1 cup/200g deseeded dates/khajoor
2 cup water
2 tbsp tamarind/imli paste
1 cup/100g jaggery/gud
1 tsp red chilli powder
1 tsp cumin powder
1/2 tsp dry ginger powder
1/2 tsp garam masala
1 tsp salt
1/2 tsp black salt
SERVES: Makes 478g Khajur Imli Chutney
PREPARATION TIME: 10 Min
COOKING TIME: 15 Min
TOTAL TIME: 25 Min
* 1 CUP = 237 ML
METHOD:
1. Cook dates/khajoor in 1 cup water for 3 whistles in a cooker.
2. Allow it to cool down.
3. Blend using a blender.
4. Add 1/2 cup water & blend to smooth paste.
5. Strain the paste.
6. Put paste in pan on low flame.
7. Add tamarind/imli paste, jaggery/gud, red chilli powder, cumin powder, dry ginger powder, garam masala, salt & black salt. Mix.
8. Add 1/2 cup water & bring to boil.
9. Cook for 3-4 min on med flame.
10. Switch off flame & allow to cool down.
11. Store in air tight container for 6 months in freezer/1 month in refrigerator.
12. Use it with your favourite chaat or snack.
TIPS:
1. Wash & clean dates before using. If using seeds variety, deseed it before using.
2. You can either pressure cook the dates or boil it in open pan for 5-7 min.
3. If you use whole imli wash & soak it for 1 hour. Then deseed it & cook imli together with dates. Proceed with rest of the recipe as above.
