Amritsari Dhabe Ki Dal or Punjabi Kali Chilke Wali Dal is a tasty delicacy from the food capital of North India, Amritsar. This dal makes absolute delight with Parathas or Rice. Urad, Rajma and Chana Dal are used in this recipe and onion, tomatoes, spices are added in tadka or tempering. Dried fenugreek or Kasoori Methi and Butter is added to add a punch of taste to this dal. This is a wholesome meal and the typical Punjabi would just love this any day. Ingredients:
1/8 Cup Bengal Gram (Chana Dal)
1/8 Cup Red Kidney Beans (Rajma)
1/4 Cup Black Beans (Sabut Urad Dal)
2 1/2 Cup Water + 1 1/2 Cup Water
5 Tbsp Oil
1/4 Tsp Cumin Seeds (Jeera)
1/4 Tsp Asafoetida (Hing)
1/2 Tbsp Grated Garlic
2 Onions finely chopped
2 Tomatoes finely chopped
2 Green Chillies Slit long
1 Tbsp Chopped Green Chillies
1/8 Tsp Turmeric (Haldi)
2 Tsp Red Chilli Powder
1 Tsp Coriander Powder (Dhania powder)
1 Tsp Cumin Powder (Jeera Powder)
1/4 Cup Freshly Chopped Coriander (Dhania)
1 Tbsp Dry Roasted Kasoori Methi (Dry Fenugreek)
3 Tbsp Fresh Cream / Malai / Butter
Salt to taste
Serving: Serves 4-5 people
Preparation time: 20 min + Soaking time - 6 hours
Cooking time: 50-60 min
* 1 Cup = 237 ml
Method:
1. Wash and soak the Bengal Gram (Chana Dal), Red Kidney Beans (Rajma) and Black Beans (Sabut Urad Dal) for at least 6 hours or overnight.
2. Drain the water and pressure cook the Soaked Dal with 2 1/2 cup Fresh Water and Salt to taste for 1 whistle on high flame and then simmer for 20-25 min on low flame.
3. In a pan heat Oil and add Cumin Seeds.
4. Once Cumin Seeds turn golden add Asafoetida (Hing), Grated Garlic and Chopped Onions and saute till Onions turn golden (2-3 min).
5. Once Onions turn golden, add Chopped Tomatoes, Slit Green Chillies, Chopped Green Chillies and mix well.
6. Now add Turmeric (Haldi), Red Chilli Powder, Coriander Powder (Dhania), Cumin Powder (Jeera Powder) and Salt to taste. Cook for 5 min till Oil separates.
7. Once oil separates add Boiled Dal and mix well.
8. Add 1/2 Cup water and Chopped Coriander (Dhania) and mix well.
9. Add Dry Roasted Kasoori Methi by crushing between hands. Use Kasoori Methi which is roasted on Tava for 4-5 min.
10. Cover and cook for 5-6 min on medium flame. Add 1/2 - 1 Cup Water if Dal is thick.
11. Add Fresh Cream and mix well. Add 1/2 Cup more water if Dal appears thick. Cover and cook for 1-2 min.
12. Once cooked switch off the flame. Delicious Amritsari Dhabe Ki Dal is ready to serve! Serve with Rotis / Parathas or Rice with a dash of Butter on top!
