Homemade Pan Pizza which tastes just like restaurant made. If followed with precision this recipe is for a keeper.

Ingredients:

For the Pizza Base:

2 & 1/2 cups All purpose flour / Maida
2 Tsp Instant Dry Yeast
1 Tsp Sugar
1 & 1/2 Tbsp Olive Oil (plus for greasing - 2 Tsp approx.)
3/4 Tsp Salt (to taste)
1/2 Cup Lukewarm Water
1/2 Cup Lukewarm Milk
2-3 Tbsp Cornmeal or Semolina

For the Toppings:

4-5 Tbsp Pizza Sauce
Sliced Onions & Capsicum, Cubed Paneer & Tomatoes, Boiled Corn or veggies of your choice - As needed
Grated Pizza Cheese (Mozarella and Processed cheese) - As needed

Serving: Makes 4 - 6 inch size or 2 - 8 inch size pizza
Preparation & Resting Time: 1 hr 20 min
Baking Time: 10-12 min

Method:

1. In a bowl mix maida, instant dry yeast, sugar and oil.
2. Add salt and mix.
3. Add lukewarm water and milk and mix to get a dough which is sticky.
4. Knead forward and backward for 10 minutes till smooth. Grease your hands if needed. Beat by throwing the dough once or twice.
5. After 10 minutes the dough will be soft and not sticky anymore and can be rolled easily in to a ball with hands.
6. Grease a big bowl with oil. Place the dough in it and even the dough with your hands.
7. Cover with cling wrap and prove it for 1 hour in a dark place. Do not over prove or else the dough will taste sour.
8. After 1 hour it will double in volume. Punch it down and divide in to 4 equal size balls.
9. Take one of the pizza balls and start rolling it with hands on semolina / cornmeal dusted surface. Semolina / cornmeal makes the pizza crunchy. Do not use rolling pin (belan).
10. Place the rolled pizza in a 6 inch pan and spread it evenly with your finger tips if required.
11. Spread 1 Tbsp pizza sauce and add toppings evenly.
12. Cover the toppings with grated cheese. If preferred layer the cheese first followed by the toppings.
13. Bake in a pre-heated oven at 200-220C for 10-12 min.
14. Slice in 4 equal portions and serve hot.

  • If substituting Active Dry Yeast for Instant Yeast then add the yeast & sugar to lukewarm water (listed in ingredients above). Cover and allow to it activate for 10 mins. Once it is frothy & bubbly add it to the dough mixture.
