Doodhi Na Muthiya is a healthy break fast recipe from the state of Gujarat. It is easy to make and cooks fast with very few ingredients. It can also be used to give to children for school tiffin and can also be served as tea time snack!

INGREDIENTS:
1 cup coarsely grinded wheat flour1 cup grated bottle gourd / doodhi
1 Tbsp Powdered Sugar
1 Tbsp Curd
1 Tbsp Oil
½ Tbsp + 1 Tsp Green Chillies and Ginger paste
Pinch baking soda / soda bicarb
1-2 Tbsp Chopped coriander leaves for garnish
Salt to taste
For tempering:
3 Tbsp Oil⅛ Tsp Mustard seeds
⅛ Tsp Jeera / Cumin Seeds
½ Tsp Sesame Seeds / Til
Serving: 2-3 Persons
Preparation Time: 15 min
Cooking Time: 25-30 mins
METHOD:
1. In a large bowl mix coarsely grinded wheat flour, grated bottle gourd, powdered sugar, curd, oil, green chillies and ginger paste, eating soda and salt and form a soft dough.2. Meanwhile heat water in a large Idli stand for steaming Muthiyas.
3. Make Muthiyas from the dough and place it on a greased plate for steaming.
4. Steam Muthiyas on high flame for 15-20 mins or till a toothpick inserted comes out clean.
5. Once cooked, allow it cool completely.
6. Cut the Muthiyas into bite size pieces.
7. In a kadai/pan, heat oil for tempering. Add mustard seeds and allow it to splutter. Now add Jeera, Sesame seeds / Til.
8. Add cut Muthiyas to the tempering and cook on medium flame for 5-7 min till muthiyas turn crispy and golden in colour.
9. Garnish with chopped coriander leaves.
10. Doodhi Muthiya is ready to serve!
