Kutchi Dabeli | Gujarati Dabeli Recipe- Magic of Indian Rasoi - Priya R

Kutchi Dabeli is famous street snack of Gujarat and Maharashtra. Originally from Mandvi, Kutch region this lip smacking snack looks like vada pav or burger but has tangy, spicy, sweet taste and is enjoyed by young and old alike.

INGREDIENTS:

For Dabeli Stuffing:

3 Tbsp Oil
2 Tsp Garlic Chutney
2 Tbsp Khajoor Gud Imli Chutney/ Khatti Meethi Imli Chutney
1 Cup Grated/Mashed Boiled Potatoes
1/2 Tbsp Dabeli Masala
1/8 Tsp Turmeric Powder
2-3 Tbsp Water or as needed
2 Tbsp Dessicated Coconut
1-2 Tbsp Freshly Chopped Coriander Leaves
Salt to taste

For Assembling Dabeli:

Prepared Dabeli Stuffing
10-12 Dabeli Pav/Dinner Rolls/White Buns
2-3 Tbsp Garlic Chutney
2-3 Tbsp Gud Imli Chutney/ Khatti Meethi Imli Chutney
2-3 Tbsp Chopped Onion
2-3 Tbsp Masala Sing/Peanuts
2-3 Tbsp Nylon Sev/Barik Sev
2-3 Tbsp Pomegranate Seeds
1/4 Cup Butter/Oil for shallow roasting Dabeli

Serving: Makes 10-12 Dabeli
Preparation Time: 30 mins
Cooking Time: 20 mins
*1 Cup = 237ml

METHOD:

1. In a pan, heat oil, add garlic chutney & khajoor - gud- imli chutney. Cook for 2 mins.
2. Add mashed/grated boiled potatoes, dabeli masala, turmeric powder & salt to taste. Mix well.
3. Add few spoons of water to make the stuffing less thick & chunky, if needed. Mash & mix everything well. Cook the mixture for 3-4 mins & turn off the flame.
4. Spread the Dabeli stuffing in a plate. Sprinkle dessicated coconut & freshly chopped coriander leaves.
5. To assemble Dabeli, slit the bun/pav from between.
6. Apply garlic chutney on one side of the bun and gud- imli chutney on the other side.
7. Layer about 1/2 Tbsp of prepared Dabeli stuffing evenly on one side of the bun.
8. On the layered stuffing, spread chopped onion, masala sing, nylon sev & pomegranate seeds as per your choice.
9. Lightly press the bun, to seal the stuffing inside.
10. Heat a pan/tawa, with some oil or butter on medium flame, roast the Dabeli Buns on both the sides lightly. Repeat the process for all the Dabeli Buns.
11. Serve hot!
