Gujarati Dal Recipe - No Gujarati meal is complete without this sweet and sour tasting Tuvar Dal. This Toor Dal makes everyday simple food interesting and tempting. Lots and lots of variations are done in different households in Gujarat but the basic flavors remain the same i.e. sweetness from jaggery or sugar and tanginess from lemon or imli.

Ingredients:
1/4 Cup Toor Dal/Tuvar Dal/Split Pigeon Peas
2 Tbsp Chopped Onion
2 Tbsp Chopped Tomatoes
1 Tbsp Peanuts
1/8 Tsp Turmeric Powder
2 Tbsp Oil
1/8 Tsp Mustard Seeds/Rai
1/8 Tsp Fenugreek Seeds/Methi Ke Dane
1/8 Tsp Cumin/Jeera
1/8 Tsp Asafoetida/Hing
4-5 Curry Leaves
1/2 Tsp Ginger & Green Chillies Paste
1/2 Tsp Sesame Seeds/Til
1/2 Tsp Coriander Powder
1/2 Tsp Red Chilli Powder
1 Tbsp Jaggery/Gud
2 Tsp Lemon Juice
1 Tbsp Chopped Coriander Leaves
2 Cups Water approx
Salt to taste
Serving: 2-3 Persons
Preparation Time: 1-2 hours
Cooking Time: 30 mins
*1 Cup = 237ml
Method:
1. Wash toor dal few times and soak it in clean water for 1-2 hours.
2. Drain the water from the toor dal and put it in pressure cooker. Add 1 cup water, chopped onion & tomatoes, peanuts, turmeric powder & salt to taste.
3. Pressure cook for one whistle on high flame, then lower the flame and cook the dal for 10 mins.
4. Switch off the flame and allow the pressure cooker to cool completely on its own.
5. Open the lid and mash the dal with a wire rack or madhani. Add another 1 cup water or as needed. Mix & keep aside.
6. Prepare tempering, in a small pan heat oil, add mustard seeds and allow it to crackle.
7. Add methi seeds (switch off the flame if the oil is very hot), cumin seeds, asafoetida, curry leaves, ginger & green chillies paste, sesame seeds, coriander powder & red chilli powder. Mix well and pour the tempering over cooked dal. Mix again.
8. Add jaggery & lemon juice to the dal. Mix well.
9. Cook the dal on low flame for another 10 mins.
10. Switch off the flame. Garnish with freshly chopped coriander leaves.
11. Serve hot with plain/jeera rice!
