Palak Corn Dhokla is very healthy version of Gujarati Dhokla. It can be had as a breakfast or even as a light snack anytime. With the goodness of moong dal combined with Palak and Corn this meal makes wholesome and filling. Kids will love this recipe and it can also be given as tiffin snack during recess. Dhokla can be made using different dals or mixture of dals. Here we have used Chilkewali moong dal.

Ingredients:
1/2 Cup Rice
1/4 Cup Chilkewali Moong Dal (Split Moong Dal with skin)
1/2 Cup Chopped Spinach
1/4 Cup Boiled Corn
1/8 Tsp Methi Seeds (Fenugreek Seeds)
1 Tbsp Curd
1 Tsp Green Chillies & Ginger Paste
4-5 Curry Leaves
1 Tbsp Oil + 2 Tsp Oil
1 Tsp Eno Fruit Salt
1/8 Tsp Turmeric Powder
1/8 Tsp Mustard Seeds
1/8 Tsp Cumin Seeds
1/8 Tsp Asafoetida/Hing
1/4 Tsp Sesame Seeds/Til
1/8 Tsp Red Chilli Powder
1/8 Tsp Black Pepper Powder
1/4 Cup Water or as needed
Salt to taste
Serving: 2-3 Persons
Preparation Time: 5-6 hours
Cooking Time: 20 mins
*1 Cup = 237ml
Method:
1. Wash rice for 2-3 times and soak it in water with methi seeds for 4-5 hours.
2. Wash chilkwali moong dal 2-3 times and soak it in water separately for 4-5 hours.
3. Strain water from dal and rice.
4. Grind rice & methi seeds coarsely using water as needed. Remove in a bowl.
5. Similarly, grind dal coarsely using water as needed and add it in the same bowl as rice. Mix well.
6. Add salt & turmeric powder to the batter. Mix and keep aside.
7. Prepare tempering. In a small pan, heat 1 tbsp oil, add mustard seeds and allow it to crackle.
8. Meanwhile, heat water in idli stand for steaming.
9. Add cumin seeds, asafoetida & curry leaves. Switch off the flame. Allow it to cool a bit.
10. In the rice & dal batter, add spinach, corn, curd, green chillies & ginger paste. Mix well.
11. Add prepared tempering and mix.
12. Add Eno fruit salt and mix vigorously in one direction, till it starts to ferment.
13. Pour the batter evenly in two greased dhokla thali and tap it lightly.
14. Sprinkle red chilli powder, black pepper powder & sesame seeds.
15. Steam dhokla in idli maker on high flame for 15-20 mins until its done.
16. Once cooked, spread 1 tsp oil on each dhokla plate and spread it evenly while its still hot.
17. Allow it to cool completely and then cut it into desired pieces.
17. Serve Healthy Palak Corn Dhokla with Green Chutney!
