Achari Mathri is a delicious snack and it is very popular in North India. It is also called Khasta Mathi or Mathri. It is crispy snack and is usually made in plain flavour and deep fried slowly in hot oil. It can be eaten with Tea or as plain snack with some Pickle or Achar. Here we have combined the Achar in to Mathri to give it tangy and spicy flavour. This mathri are also great while travelling. And Achar combined in this Mathri makes a great snack and you do not need to carry pickle with you! In this recipe you can use any available pickle.  But don't use any Veggie or Fruit from pickle.  This recipe is also a perfect way to use any left over pickle masala!

Ingredients:

1 1/2 Cup Maida (Refined Flour)
1/4 Cup Oil
2 Tbsp Pickle Masala 
1/2 Tsp Turmeric Powder (Haldi)
1/4 Tsp Carom Seeds (Ajwain)
1/4 Cup - 1/3 Cup Water
Salt to taste

Serves: 200 gm Mathri
Preparation time: 15 min
Cooking time: 20 min
* 1 Cup = 237 ml

Method:

1. In a big bow mix Maida, Oil, Salt, Turmeric Powder (Haldi), Carom Seeds (Ajwain), Pickle Masala. You can use any Pickle's Masala but do not add any fruits or veggies from it. Also Salt should be used little less as Pickle Masala would already have Salt.
2. Use Water to knead in to stiff dough. Cover and keep aside for 30 min.
3. After 30 min knead the dough for 1-2 min and divide in to 2 or 3 equal size balls.
4. Using a rolling pin roll the balls in to a Paratha like Roti with thickness approx 1/4".
5. Using a cookie stencil cut Mathri in desired shape. Alternatively make smaller balls from the dough and roll it to Small Puri Shape rounds.
6. Deep fry in hot oil in about 2 batches. When putting the Mathri in Hot Oil keep the flame on medium and then reduce to low flame. Fry Mathri on low flame for 5-7 min till golden. Do not use medium or high flame as Mathri will remain uncooked from inside. It should be cooked slowly to cook from inside.
7. Take out Mathris on paper napkin and cool completely. Repeat step for frying rest of Mathris.
8. Once completely cooled store Mathris in Air Tight Container. It can be stored for 15 days. Ensure that the container is free from moisture to retain the crispiness of the Mathris. Serve Mathris during Festival time or have it with tea as snack! ENJOY!
