Swirled Eggless Marble Cake is a amazing marble cake with dark colour batter infused in light batter to give a marble like effect. It is a perfect tea time cake and can be even enjoyed as dessert. It is a very easy recipe and even first time cake bakers can do it with finesse. Just follow this recipe and make a wonderful cake. We have made swirls using knife but you can use any other thing to give the swirls. Ensure to swirl deep inside so that the marble effect shows in the entire cake. What's more - this is an Eggless Cake using Curd!

Ingredients:

1 Cup + 2 Tbsp Maida
1 Tsp Baking Powder
1/2 Tsp Baking Soda
1/3 Cup Oil
1/2 Cup Fresh Thick Curd / Yoghurt
1 Cup Powdered Sugar
1 Tsp Vanilla Essence
1 Tbsp Icing Sugar
2 Tbsp Cocoa Powder
2 Tbsp Water
Milk for Batter as required

Serves: Makes 7" loaf or 6" Square or round cake
Preparation time: 20 min
Baking time: 25 min
* 1 Cup = 237 ml

Method:

1) Sieve Maida, Baking Powder and Baking Soda in a bowl.
2) In a separate bowl add Oil, Fresh Thick Curd and blend using a hand whisker till it becomes light.
3) Add Powdered Sugar to it gradually mixing it in the oil-curd mixture.
4) Add Vanilla Essence and mix well.
5) Now add the flour mixture to it gradually mixing well to form a smooth batter. If the batter feels tight add little milk as required.
6) In a separate bowl mix Icing Sugar, Cocoa Powder and Water and form a smooth paste.
7) Now take greased 7 " loaf mould and place a parchment paper at the bottom. Add half of the batter mixture and over it add half of the cocoa paste. Make swirls in the batter using a knife or any other utensil. Ensure to dig deep in the batter so that swirls gets created deep inside the batter. Do not over do it - you just have to swirl once or twice.
8) Add remaining of the batter and over it add the cocoa paste. Make swirls again as per step 7 above.
9) Bake the cake in a pre-heated oven at 180 C for 20-25 min or till a tooth-pick comes clean.
10) Unmould the cake and place it over a wire rack to cool completely.
11) Cut cake in to slices and serve!
