Atte Ki Pinni or Wheat Flour Ladoo is a most common sweet prepared in North India especially during winters. It has health benefits as it keeps cold, cough at bay. It also very useful for pregnancy & post pregnancy recovery. Pinni ladoos is also ideal to serve as prasad for Ganesh Chaturti festival.

Ingredients:

5 Cup Coarse Whole Wheat Flour (Gehun Ka Atta)
1 1/2 Cup Melted Ghee
2 Cup Powdered Sugar
1 1/2 Cups Chopped Dry Fruits - Almonds & Cashewnuts (Badam & Kaju)

Serving: approx 20-25 ladoos
Preparation time: 45-50 min
Cooking Time: 40-45 min
*1 cup = 237 ml

Method:

1. In a large kadai/pan, add Melted Ghee. Turn on the gas on low flame. Keep the gas on low flame throughout the cooking process.
2. Add coarsely grinded Gehun Ka Atta (Whole Wheat Flour) and mix it well.
3. Let this mixture cook on low flame for 30-45 mins till it turns brown in color. Make sure to stir it every 5 mins.
4. Turn off the gas once it is turned to brown color.
5. Add Chopped Dry Fruits & mix well.
6. Allow the mixture to cool for 30 mins or till it is little warm to touch. Don't let it cool completely.
7. Add Powdered Sugar. Make sure the mixture is warm and not too hot. If its hot sugar will dissolve.
8. Mix sugar well, there should be no lumps.
9. Make ladoos (round balls) of the desired size quickly before the mixture cools down & hardens.
10. Let the ladoos cool down for 1-2 hours before storing it in air tight container. It lasts easily for 15-20 days at room temperature.
