INGREDIENTS:
3/4 Cup + 1/8 Cup Maida/ All Purpose Flour
1/4 Cup or 45g Softened Salted Butter
1/3 Cup Milk approx
1/2 Cup + 1 Tbsp Powdered Sugar
1/2 Cup Grated Carrot
1/2 Cup Mashed Ripe Bananas
1 Tbsp Black Raisins
3/4 Tsp Baking Powder
1/4 + 1/8 Tsp Baking Soda
Serves: Make 6" Square Cake (9 pieces of 2"x2")
Preparation time: 15 min
Baking time: 25 min
* 1 Cup=237 ml
METHOD:
1. In a bowl mix Maida, Baking Powder and Baking Soda. Keep aside.
2. In another bowl, mix Sugar and Butter until smooth.
3. Add Grated Carrot and Mashed Banana. Mix well.
4. Add dry ingredients (maida, baking powder and baking soda) little by little and mix gently.
5. Add milk as needed to get dropping consistency batter.
6. Transfer the cake mixture into a 6 inch greased and parchement paper lined square/round cake mould.
7. Tap gently to even out the batter and release air bubbles.
8. Bake in pre-heated oven at 180°C/350°F for 20-25 mins or until tooth-pick inserted comes out clean.
9. Remove from the oven. Transfer to cooling rack after 5 mins.
10. Allow the cake to cool completely and cut into desired pieces.
11. Banana & Carrot Cake is ready to serve!
