Eggless Tutti Frutti Cake - Tea Time Fruit Cake

Eggless Tutti Frutti Cake is an easy cake recipe which can be had anytime of the day. It is a spongy cake made using all purpose flour, candied tutti frutti, raisins, spices, butter, milk and sugar. You can make this recipe at home and give your family home made cake. For making this cake fluffy and moist milk is mixed with baking soda and vinegar so you get perfect spongy cake! INGREDIENTS:

1 1/2 Cup All Purpose Flour (Maida)
1/4 Tsp Cinnamon Powder
1/8 Tsp Clove Powder
1-2 pinch freshly grated Nutmeg
100gm Salted Butter at room temperature
1 Cup Powdered Sugar
1/2 Tsp Baking Powder
1/2 Cup Milk at room temperature
1 1/2 Tbsp Vinegar
1/2 Tsp Baking Soda
1 Tbsp Black Raisins
1 Tbsp Golden Raisins
1/4 Cup Tutti-frutti

PREPARATION TIME: 10 Min
BAKING TIME: 40 Min
TOTAL TIME: 50 Min
* 1 CUP = 237 ML

METHOD:

1. Sieve All Purpose Flour (Maida), Cinnamon Powder, Clove Powder, Grated Nutmeg in a bowl.
2. Add Butter and Rub it with Maida with finger tips till it resembles bread crumbs like texture. Do not over mix.
3. Add Powdered Sugar, Baking Powder and mix well.
4. Take 1/4 Cup Milk at room temperature and mix Vinegar to it.
5. In a separate big bowl take 1/4 Cup Luke Warm Milk and mix Baking Soda to it.
6. Put the milk with vinegar to milk with baking soda and mix. Milk will start to froth!
7. Immediately put the milk mixture to flour and mix with whisker to ensure no lumps.
8. Add Black Raisins, Golden Raisins and Tutti-frutti.
9. Fold the tutti frutti and raisins in the batter. Do not over mix.
10. Grease a 7.5"x3.5" Loaf tin with butter and place parchment paper on bottom.
11. Put the batter in loaf tin. Tap the loaf tin so that batter is spread evenly and any air bubbles are released.
12. Bake the cake in a pre-heated oven at 190C/374F for 20 min and then at 150C/302F for 20 min. Check and if required bake for 5 min more.
13. After 40 min take out the tin from the oven and allow it to rest for 10 min.
14. Using a knife scrape the sides of the tin. Place a plate over/under the tin and turn it upside down. Lightly tap the tin so that the cake will come out.
15. Put the cake on a cooling rack for at least 2-3 hours.
16. Cut cake in to slices and it is ready to eat!

TIPS:

1. Ensure to take a big enough bowl to mix vinegar milk and baking soda milk so that it does not come out when it froths.
2. You can add cashew nuts also along with raisins.
