INGREDIENTS:
1/3 Cup Almonds / Badam
1 Cup Sugar
3/4 Cup Water
1/4 Tsp Kesar / Saffron
SERVES: Makes 400 ml Syrup
PREPARATION TIME: 20 MIN
COOKING TIME: 5 MIN
TOTAL TIME: 25 MIN
* 1 CUP = 237 ML
METHOD:
1. Soak the Almonds / Badam for 6 hours or overnight.
2. Peel the soaked Almonds and grind it to smooth paste with 1 or 2 spoon water.
3. Mix Sugar and Water in a Pan and heat on HIGH flame. Once it starts to boil cook for 1-2 min and then switch off flame.
4. Strain the syrup and mix Almond paste in it. Let it sit for 5 min.
5. Strain the mixture and separate the large almond pieces. Put the large pieces in Mixer Grinder and grind again to a smooth paste.
6. Mix the Almond paste back in the syrup.
7. Add Kesar / Saffron and mix well. Allow it to sit for 15-20 min.
8. Mix well. Badam Kesar Syrup is now ready.
9. Transfer the Syrup to a clean bottle and store in refrigerator for 15 days.
10. To make Badam Kesar Milk mix 4-5 Spoon Syrup with 1 Cup Milk. Enjoy.
