Kids loves Pizza and here we bring an innovative recipe - Mini Bhakri Pizza. The regular pizza base made from all purpose flour is replaced with Bhakri - Indian Wheat Flour Flat Bread. Bhakri is traditionally made in Western States of India namely Gujarat and Maharashtra and also in Rajasthan. It is thick Paratha like roti and is very crispy and cooked slowly. We can call this healthier version of Pizza owing to use of Wheat Flour Base. This delicious Pizza is easy to make and here we show complete recipe starting from making home made Pizza to Paneer and Capsicum toppings. You can replace the toppings with any of your choice of toppings. Do make this great Pizza this vacation for your kids. It is good to go for parties too!

INGREDIENTS:
For Pizza Sauce:
2 Tbsp Oil
1 Bay Leaf broken in to two
1 Finely Chopped Medium Size Onion
1/4 Tsp Garlic Paste (4-5 Grated Garlic Cloves)
2 Finely Chopped Tomatoes (blanched and peeled)
Salt to taste
1/4 Tsp Red Chilli Powder
1/4 Tsp Black Pepper Powder
1/4 Tsp Oregano
1/4 Tsp Mixed Herbs (optional)
1/2 Tsp Sugar
Toppings (for total 6 Mini Pizzas):
1/4 Cup Diced Paneer
1/4 Cup Chopped Capsicum
1/3 Cup Mozzarella Cheese
1/3 Cup Processed Cheese
1/2 Tsp Chilli Flakes
1/2 Tsp Oregano
For Marinating the Paneer:
1 Tsp Oil
1-2 Pinch Turmeric Powder
Little Salt
For Making Bhakri Dough (Pizza Base)
1 Cup Wheat Flour (You can also take multi-grain flour)
2 Tbsp Clarified Butter (Ghee)
1/4 Tsp Black Pepper Powder
1/2 Tsp Chilli Flakes
1/8 Tsp Cumin Powder
Salt to taste
1/3 Cup Water to knead dough
For Cooking Pizzas (for total 6 Mini Pizzas):
3 Tbsp Butter
SERVES: Makes 6 3" Mini Bhakri Pizzas
PREPARATION TIME: 20 Min
COOKING TIME: 30 Min
TOTAL TIME: 50 Min
* 1 CUP = 237 ML
METHOD:
Making Pizza Sauce:
1. In a Pan add Oil, Bay Leaf and Chopped Onions and saute for 1-2 min on med-high flame.
2. Add Garlic Paste and cook 2-3 min till it onions turns pink.
3. Add Chopped Tomatoes, Salt to taste, Red Chilli Powder, Black Pepper Powder, Oregano, Mixed Herbs, and Sugar. Mix well and cook for 2-3 min till oil separates from gravy.
4. Once gravy is cooked remove the bay leaf.
5. Keep stirring the pizza sauce and mash the tomatoes.
6. After 3-4 min oil will separate from gravy and pizza sauce is cooked.
7. Switch off the flame. Keep Pizza Sauce aside.
Marinating Paneer (topping):
1. Take Diced Paneer in a bowl and add Oil, Turmeric Powder and Salt.
2. Mix well and keep aside.
Making Bhakri Dough (Pizza Base):
1. Take Wheat Flour in a bowl.
2. Add Clarified Butter (Ghee), Black Pepper Powder, Chilli Flakes, Cumin Powder, and salt to taste. Mix well.
3. Using little water knead a medium stiff dough.
Cooking Pizza:
1. Divide the dough in two, and using one half roll it in to a thick paratha shape round using a rolling pin and board.
2. Using a round bowl (about 3") or any round cutter cut mini round Bhakri.
3. Heat a Pan and then lower the flame. Roast one side of the Bhakri Base completely.
4. Turn Pizza over and apply 1/2 Tsp Butter and put 1 Tsp Pizza Sauce, 1 Tbsp Mozzarella Cheese, pinch Chilli Flakes, Pinch Oregano, Paneer, Chopped capsicum, 1 Tbsp Processed Cheese over the cooked side.
5. Put 1 Tsp Butter on Pan and move the Bhakri pizza over it so that Butter spread on its base.
6. Cook for 5-7 min on low flame covering the Pan till the base of Pizza turns crispy.
7. Take it out on plate and serve hot!
TIPS:
1. Don't knead very stiff dough. Make it similar to Paratha dough
2. If you prefer you can big round Pizza out of dough instead of cutting it.
3. While cooking pizza check the base after 2-3 min. Ensure to cook on low flame so that it cooks from inside as Bhakri base is thick. It should be crispy and brown.
4. When putting toppings you can switch off flame for 1 min and then switch it back on so that you get time putting toppings.
5. You can also use any other pizza topping as per your choice.
