Rajbhog Shrikhand or Dry Fruits Matho is Indian Sweet or Dessert made using Hung Curd mixed with Sugar and Dry Fruits. Hung Curd is made by removing excess water from Yoghurt or Curd by hanging it or placing it over strainer so that the whey or Curd Water is drained. It is a popular sweet made during summers. Shrikhand mixed with dry fruits or fresh fruits is usually called Matho in Gujarat and is often served at weddings and special occasions. INGREDIENTS:
For Making Curd:
500 ml Full Fat Milk
1 Tbsp Yoghurt / Curd
For Making Shrikhand:
500 gm Curd
1 Tbsp Milk
8-10 Strands of Saffron / Kesar
1/3 Cup Powdered Sugar
1/3 Cup Dry Fruits (Clippings of Almonds, Cashew Nuts and Pistachios)
1/4 Tsp Cardamom Powder (Optional)
SERVES: Makes about 250 gm Rajbhog Shrikhand
PREPARATION TIME: 10 Min
COOKING TIME: 2 Min
TOTAL TIME: 12 Min
* 1 CUP = 237 ML
METHOD:
Making Curd:
1. Use previously boiled and cooled milk or boil milk and bring it to lukewarm temperature.
2. Take glass or ceramic or earthern bowl.
3. Spread Yoghurt / Curd in the bowl well.
4. Add lukewarm milk to the bowl and mix well.
5. Cover the bowl and keep in a dark place for 4-8 hours till Curd sets.
6. Refrigerate the Curd for 3-4 hours before doing further process.
Making Shrikhand:
1. Place a fine mesh strainer or Muslin cloth over a bowl.
2. Put the Curd on the strainer.
3. Cover the strainer and put it along with bowl in refrigerator for 6-8 hours.
4. Water from Curd will drain in the bowl.
5. For making Saffron / Kesar mixture mix hot milk and saffron strands in a small bowl. Let is cool down and then put it in refrigerator till further process.
6. Take out the Hung curd in a bowl.
7. Add the Saffrron mixture, powdered sugar to hung curd and mix well.
8. Now add dry fruits and cardamom powder to Shrikhand.
9. Mix everything well and put the Shrikhand in refrigerator for 1-2 hours.
10. Rajbhog Shrikhand is ready to eat!
