Sindhi Sai Bhaji is an authentic recipe from the Sindhi Cuisine. It is a curry (sabji) made from Spinach (Palak), Bengal Split Gram (Chana Dal), and other vegetables. It is traditionally had with Plain White Rice or Sweet Rice (Tahiri). It is loaded with goodness of pulses, green veggies & tastes superb. It is one of those single dish meal that you can make in jiffy! You just need some rice & papad to go with it. Yes! You need papad as accompaniment to have Sindhi feel while you eat this. INGREDIENTS:
2 Tbsp Oil
1 Tsp Cumin Seeds
1/4 Tsp Asafoetida
1 Chopped Onion
3 Chopped Tomatoes
1/2 Inch Ginger (minced or sliced)
1 Finely Chopped Green Chilli
2 Tsp Red Chilli Powder
2 Tsp Coriander Powder
1/4 Tsp Turmeric Powder
1/2 Tsp Dry Mango Powder
1 Chopped Potato
1/4 Cup Peas
1/2 Cup Bengal Gram Whole (Chana Dal – Washed & Soaked for 3 hours)
2 Cups Roughly Chopped Spinach
1.5 Cup Water or as needed
Salt to taste
SERVES: 2-3 people
PREPARATION TIME: 20 Min
COOKING TIME: 15 Min
TOTAL TIME: 35 Min
* 1 CUP = 237 ML
METHOD:
1. Heat oil in pressure cooker and add cumin seeds & allow it to flutter a bit.
2. Add asafoetida & onion. Cook onion till it turns slightly pink in color or translucent.
3. Add tomatoes, ginger & green chilli, cook it for 2-3 minutes till tomatoes becomes a little soft.
4. Once tomato turns soft, season the mixture with red chilli powder, coriander powder, salt, dry mango powder & turmeric powder. Give a quick stir & cook it till oil separates.
5. Add potatoes, peas, dal (pulses) & spinach, cook this till spinach leaves it water.
6. Add water. Cover the pressure cooker lid & let it cook till 6-7 whistles.
7. Once the cooker cools down on it own, check if the dal (pulse) is cooked through, if not give it another 2-3 whistles.
8. Mash the Bhaji roughly with a pav bhaji masher.
9. Give it a quick boil & serve it with rice & papad. Enjoy.
TIPS:
You can add in 1 Tsp of garlic roughly chopped or paste, if you prefer that flavour but this Sai Bhaji tastes phenomenal as it is!
