Eggless Christmas Fruit Cake Recipe – Traditional Christmas Fruit Cake is made with dry fruits, candied fruits, spices soaked in rum or brandy at least a month before it is prepared for the festival. But even when such elaborate process is not followed, this last minute Eggless Christmas Fruit Cake Recipe is easy to bake and tastes delicious!

INGREDIENTS:
1 Cup All Purpose Flour/Maida
1/2 Tsp Baking Powder
1/2 Tsp Baking Soda
1/2 Tin Condensed Milk (200g)
1/3 Cup Oil or Butter (at room temperature)
2 Tbsp Cocoa Powder
100ml Thumbs Up/Coca Cola
1/2 Cup chopped Dry Fruits (Almonds, Cashew, Walnuts)
4-5 Dates (deseeded, soaked in warm water for an hour and then chopped)
2 Tbsp Black Raisins
1 Tbsp Golden Raisins
1/4 Tsp Cinnamon Powder
Pinch/Dash of Nutmeg
Serving: One 8 inch size cake
Preparation Time: 25 mins
Baking Time: 40-45 mins
*1 Cup = 237 ml
METHOD:
1. Pre-heat oven at 180C/356F. Grease the mould with oil and line it with butter paper.
2. Mix flour, baking powder, baking soda and cocoa powder well in a bowl.
3. In a separare bowl, mix condensed milk and oil till well combined.
4. Slowly add wet ingredients to flour mixture and mix well.
5. Alternatively, add thumbs up or coca cola till thick consistency batter is achieved. Make sure there are no lumps.
6. Add dates, dry fruits, black and golden raisins, cinnamom powder and nutmeg.
7. Mix well in one direction using a whisker or electric beater.
8. Pour the batter in cake mould and tap it lightly.
9. Bake at 180C/356F for 15 mins and then at 150C/302F for 25 mins or until done. Keep an close eye as all oven work differently.
10. Once baked take out the tray and let it sit for 5 mins and then transfer the cake to cooling rack.
11. Slice the Eggless Christmas Fruit Cake in desired shape and it is ready to serve.
