INGREDIENTS:
1/3 Cup Split Green Gram (Moong ki Chilkewali Dal)
1/3 Cup Split Yellow Lentils (Moong Dal)
1/2 Tbsp Split and deshusked Black Gram (Urad Dal)
1 Tbsp Rice
2 Tbsp Water
1/4 Tsp Asafoetida (Hing)
1/4 Tsp Black Pepper Powder (coarsely grounded)
1 Tbsp Hot Oil
Salt to taste
Pinch Baking Soda (Meetha Soda)
1/2 Tsp Grated Ginger
1/2 Tsp Grated Garlic (Optional)
1 or 2 finely chopped Green Chillies
2 Tbsp finely chopped Coriander Leaves
SERVES: Makes about 275 gm Daalwada (2-3 people)
PREPARATION TIME: 10 Min
COOKING TIME: 15 Min
TOTAL TIME: 25 Min
* 1 CUP = 237 ML
METHOD:
1. Wash the lentils and rice together for 3-4 times and then soak in lots of water for 6-8 hours.
2. After 8 hours drain the water and grind to a coarse mixture. Use about 2 Tbsp Water if required. Ensure NOT to grind to a fine paste.
3. Take the mixture in a big bowl.
4. Add Asafoetida (Hing), Black Pepper Powder, Hot Oil, Salt and Baking Soda and Mix everything well.
5. Add Grated Ginger, Grated Garlic (optional), finely chopped Green Chillies, finely chopped Coriander Leaves. Mix everything well for 1-2 min so that batter becomes light and fluffy.
6. Heat oil for frying in a pan / kadai and once hot reduce flame to low.
7. Put small Vadas in oil using your hand. You may also use a spoon.
8. Fry each batch on low-med flame for 4-5 min till light golden colour.
9. Once Dalwada are light golden colour take them out on a paper napkin.
10. Hot Dalwada are ready to eat. Serve with fried Green Chillies, Onions and coriander chutney / ketchup.
TIPS:
1. Do not hurry up frying Dalwada or else they will remain undercooked from inside.
2. Dalwada tastes best with fried Green Chillies. To make it fry some cut Green Chillies in hot oil for 1-2 min only till its colour change slightly. Once Chillies are done take it out on paper napkin and sprinkle some salt over it.
