Instant Rava & Corn Handvo Recipe - इंस्टेंट सूजी कॉर्न का हांडवो रेसिपी - Priya R - Magic of Indian Rasoi

Instant Rava & Corn Handvo is a quick and easy recipe to make Handvo at home without any special utensils. Handvo is a Gujarati vegetable cake made using flour, lentils and vegetables usually in a Handvo cooker. However, here we show you how to make instant Handvo. You just need some left over rice, rava (semolina), few other easily available ingredients and a non-stick pan to cook. It can be prepared instantly without the fermentation process which is usually followed for making traditional Handvo. Enjoy this dish today!

INGREDIENTS:

1/2 Cup Leftover Rice (Plain or any other salted rice or Khichdi)
1/2 Cup Rava (fine Sooji)
4 Tbsp Oil
1 Tbsp Curd (Yoghurt)
1/2 Cup Water
1 Boiled and Grated Potato
1 finely chopped small Capsicum
1 finely chopped small small carrot
1/4 Cup semi crushed boiled corn
1 Tbsp finely chopped ginger, garlic and green chillies (increase or decrease as per taste)
1/8 Tsp Turmeric
1/2 Tsp Red Chilli Powder
Salt to taste
1/4 Tsp Mustard Seeds (Rai)
1/4 Tsp Asafoetida (Hing)
1/2 Tsp Sesame Seeds (Til)
1/2 Tsp Eno Fruit Salt

SERVES: Serves 2 people 
PREPARATION TIME: 10 Min
COOKING TIME: 25 Min
TOTAL TIME: 35 Min
* 1 CUP = 237 ML

METHOD:

1. Gently mash Leftover Rice in a bowl using hands.
2. Add Rava, 1 Tbsp Oil,  Curd and mix.
3. Add 1/4 Cup Water and mix.
4. Add Boiled and Grated Potato, chopped Capsicum, chopped carrot, boiled corn, chopped ginger, garlic and green chillies, Turmeric, Red Chilli Powder, Salt and mix well.
5. Add approx 1/4 Cup water and mix.
6. Cover the mixture and allow it to rest for 15-20 min.
7. After 10-15 min check the batter. It should fall in lumps and not free flowing. If required add more water.
8. Put 2 Tbsp oil in a Pan and add Mustard Seeds (Rai) and allow it to crackle.
9. Add Asafoetida (Hing) and Sesame Seeds and switch off flame for 2 min. Mix well.
10. Add Eno Fruit Salt in the batter and add 1 Tsp Water over it so that it gets activated!
11. Immediately mix the batter.
12. Spread the Handvo Batter in Pan evenly and then switch on flame on low.
13. Cover the pan and cook Handvo for 10-12 min on low flame.
14. After 10-12 min check the Handvo and if you run a spoon around its edges it will feel stiff.
15. Switch off the flame and put a plate on top of Pan. Using a oven mitten turn over the pan on the plate and take out Handvo in plate.
16. Switch on the Pan again and keep flame on low. 
17. Add 1 Tbsp Oil.
18. Using a spatula slide the Handvo gently in to the Pan so that we can cook it on other side.
19. Lightly press the Handvo with Spatula, cover the Pan and cook for 10 min on low flame.
20. After 10 min check the Handvo. It should be cooked. Switch off the Pan and let it be in Pan for 5 min.
21. Take it out in Plate and cut in to desired pieces.

TIPS:

1. I have used plain rice. You can also take Salted rice/Khichdi instead!
2. You can also add Cabbage or Bottle Gourd (Dudhi).
3. Do not keep batter out for long after adding Eno!
