Sitaphal Basundi is a Indian Sweet dish made using milk slowly cooked till thick and then flavoured with custard apple. Basundi is usually made in Gujarat, Maharashtra and Karnataka and is often flavoured with seasonal fresh fruits or dry fruits. It can be prepared for any festival like Janmashtami, Rakshabandhan, Diwali, New Year or any special occasions. In this recipe sitaphal (custard apple) is used to give it a yummy taste. This recipe is very easy to make. Do make this for prasad this season and surprise your friends and family with this homemade Sitaphal Basundi.

INGREDIENTS:
1 litre full fat milk
2 custard apples (sitafal) - deseeded
1/4 cup sugar
8-10 almonds - blanched & thinly sliced
8-10 pistachios - thinly sliced
pinch cardamom powder
SERVES: Makes 800 ml Sitaphal Basundi
PREPARATION TIME: 15 Min
COOKING TIME: 40 Min
TOTAL TIME: 55 Min
* 1 CUP = 237 ML
METHOD:
1. Add milk & allow it to come to boil on high flame.
2. Lower the flame & cook for 30 mins on low flame till milk thickens, stirring in between and scraping the sides of pan.
3. After 30 mins, add sugar & cardamom powder. Cook for 4-5 mins more.
4. Switch off flame and take out basundi in a bowl and allow to cool down.
5. Once cool, blend the basundi with deseeded custard apples using a hand blender to get smooth consistency.
6. Add clipping of pistachios and almonds.
7. Refrigerate for 4-5 hours and serve chilled.
TIPS:
1. Grease pan with Ghee to avoid milk burning & sticking to the bottom.
