INGREDIENTS:
1 cup mixed dry fruits sliced lengthwise (cashew nuts, almonds and pistachios (in any proportion))
1 cup sugar
1/4 cup dried rose petals
1 tsp poppy seeds
1/4 tsp cardamom powder
ghee for greasing
SERVES: Makes 310gm Rose & Dry Fruits Chikki (approx)
PREPARATION TIME: 15 Mins
COOKING TIME: 15 Mins
TOTAL TIME: 30 Mins
* 1 CUP = 240 ML
METHOD:
1. Microwave dry fruits on HIGH for 1 min. Alternatively you can roast it in pan for 1 min. Keep aside.
2. In a separate pan spread 1 cup sugar and let it melt on slow flame. It will take approx 10-15 min for sugar to melt. Don't try to hurry on this process.
3. Stir intermittently once sugar starts to melt.
4. Once sugar has melted switch off flame. Don't over cook!
5. Now add dry fruits, poppy seeds & cardamom powder.
6. Mix everything well
7. Take out mixture on greased rolling board or kitchen counter (grease with clarified butter)
8. Using lightly wet hands give a round shape to hot mixture.
9. Spread dried rose petals over it and lightly press to incorporate.
10. Using a greased rolling pin flatten the chikki as much as possible.
11. Make cut marks on chikki using pizza cutter while it is still hot.
12. Allow chikki to cool down for 30 min. And then separate in to pieces.
13. Rose & Dry Fruits Chikki is ready!
