Jowar Methi Vada is a delicious fritters recipe made using Sorghum flour (also known as jowari or milo) & dried fenugreek. It is a simple and nutritious recipe and entire family can enjoy it. It contains no gluten & makes it ideal for people following no gluten diet. (In such cases replace wheat flour for gram flour.) INGREDIENTS:
1/2 cup jowar aata (sorghum flour)
1/4 cup gehun ka aata (wheat flour)
1 tbsp besan (gram flour)
1 tsp kasori methi (dried fungreek leaves)
2 tsp til/tal (sesame seeds)
1/8 tsp turmeric powder
1 tsp powdered sugar
1 tsp green chillies & ginger paste
2 tsp oil
1 tbsp curd
1/8 cup water (approx)
salt to taste
SERVES: Makes about 15 Jowar Methi Vadas
PREPARATION TIME: 10 Mins
COOKING TIME: 10 Mins
TOTAL TIME: 20 Mins
* 1 CUP = 240 ML
METHOD:
1. In a bowl, take jowar aata (sorghum flour), gehun ka aata (wheat flour), besan (gram flour), kasori methi (dried fungreek leaves) - crush it between your plams, til/tal (sesame seeds), turmeric powder, powdered sugar, green chillies & ginger paste, oil, curd & salt to taste.
2. Mix well first with fingertips. And then using required water knead into a medium stiff dough like paratha.
3. Jowar & Methi dough is ready.
4. Now make small balls from this dough. I have made 15 balls here.
5. Roll each ball smooth between palms & then press to flatten it out. Prepare all the vadas in the same way.
6. Now heat oil for deep frying & then lower the flame. We will fry Vadas in 2 batches.
7. Make sure to keep the flame low or else vadas will be raw from inside.
8. Stir intermittently & cook for 5-7 mins till golden brown in color.
9. When Vadas are nice golden brown in color, remove from oil & transfer on paper napkin. Fry remaining vadas in the same way.
10. Jowar Methi Vada is ready to serve! Enjoy it with a hot cup of tea. And serve with green chutney or ketchup!
