Rajasthani Tikkar Paratha is a delicious Indian flat bread made using corn meal, wheat flour, gram flour & mixed with tomatoes & other spices. It tastes delicious with curd or pickle & can also be served with dal had for breakfast or any other meal of the day. It is easy to prepare & is wholesome with all the different flour, veggies & spices. Serve this paratha hot with dollops of ghee or butter. INGREDIENTS:
1/2 cup makki ka aata (corn meal)
1/2 cup wheat flour
1/2 cup besan (gram flour)
1/2 cup finely chopped onions
1/2 cup finely chopped tomatoes
3-4 cloves of grated garlic
1 tbsp finely chopped coriander leaves
1 tsp red chilli powder
1/4 tsp turmeric powder
2 tbsp melted ghee (clarified butter)
1 1/2 tsp ginger chillies paste
Salt to taste
For Roasting Paratha:
3 tsp finely chopped tomatoes
3 tsp finely chopped coriander leaves
6 Tsp oil
SERVES: Makes 6 Rajasthani Tikkar Paratha
PREPARATION TIME: 15 Mins
COOKING TIME: 20 Mins
TOTAL TIME: 25 Mins
* 1 CUP = 240 ML
METHOD:
1. In a bowl take makki ka aata (corn meal, wheat flour, besan (gram flour), onions, tomatoes, garlic, coriander leaves, red chilli powder, turmeric powder, salt to taste, ghee (clarified butter), ginger chillies paste, aachar masala (pickle masala).
2. If required use water & knead into a dough. I did not require any water.
3. Now take one dough ball on hands greased with oil.
4. Roll this dough ball in dusting flour & then roll it on a board thicker than roti.
5. Sprinkle 1/2 tsp finely chopped tomatoes over it. Do not take its seeds.
6. And sprinkle 1/2 tsp finely chopped coriander leaves.
7. Lightly use rolling pin over it once.
8. Paratha is rolled & it is ready to roast. Remove it from rolling board.
9. Heat tava nicely. And lightly grease it with oil.
10. Put paratha on to tava with tomato & coriander side up.
11. Cook paratha on medium flame till some brown spots appear on one side.
12. And then turn it over. Apply 1/2 tsp oil over it.
13. Again flip it over & cook nicely. Apply 1/2 tsp oil on other side too & flip over & cook.
14. Our Rajasthani tikkar paratha is cooked & ready. If you wish you can apply ghee or butter over it.
15. Roll & cook rest of the paratha in the same way.
16. Very different & flavourful Rajasthani tikkar paratha is ready. Serve it with curd/dahi.
Tips:
1. To make even parathas you may even use a round bowl to cut it evenly.
2. In the dough you can use oil instead of ghee.
3. In the dough you can take grated or pureed tomatoes instead of chopped.
