INGREDIENTS:
1 cup besan (gram flour)
2 tbsp cornflour
2 tbsp rice flour
salt to taste
1/8 tsp asafoetida (hing)
1 tbsp oil + for frying
1/2 tsp red chilli powder
1/8 tsp turmeric powder (haldi)
1 tsp green chillies & ginger paste
1/8 tsp baking soda (eating soda)
Water as required (1/2 cup + 1/4 cup water approx)
1 tsp coarsely ground black pepper
1 tbsp coarsely ground dry coriander seeds
200g Ratalu (yam) (peeled & sliced)
SERVES: Makes about 250g Ratalu puri
PREPARATION TIME: 10 Min
COOKING TIME: 15 Min
TOTAL TIME: 25 Min
* 1 CUP = 237 ML
METHOD:
1. Mix besan (gram flour), corn flour, rice flour, salt to taste, asafoetida (hing), 1 tbsp oil, red chilli powder, turmeric powder (haldi), green chillies & ginger paste & baking soda (eating soda) in a big bowl.
2. Add required water to prepare a thick batter (as for pakoda).
3. Keep coarsely ground black pepper & coarsely ground dry coriander seeds ready to sprinkle on ratalu puri while frying.
4. Heat oil for frying.
5. Lower the flame. Dip ratalu slice in batter & coat it well. Sprinkle black pepper & coriander seeds mixture on top & slide puri in oil for frying.
6. Increase flame to high, stir intermittently & cook till golden brown in color.
7. Remove it on paper napkin.
7. Fry remaining Ratalu Puri in the same way.
8. Serve Ratalu Puri hot with a cup of tea & chutney/ketchup.
