Subz Pulao is a delicious gourmet rice dish with lot of vegetables added to it while cooking. It is flavourful & tasty & perfect for parties & get-together. This is an easy recipe & you will find it very aromatic & appealing. The recipe requires making a paste of masalas instead of using whole masalas & they are mixed with the rice while cooking. INGREDIENTS:

For making masala paste:

4-5 cloves of garlic
1/2 inch ginger
Seeds of 1 green cardamom
2 cloves
1 tsp fennel seeds (sauf)
1/2 tsp cumin seeds
1/2 tsp coriander powder
1-2 tsp water

For Pulao:

1 cup basmati rice (washed & soaked in water for 30 min)
1/4 cup oil
6 cashew nuts cut in to half
1 bay leaf (tej patta)
Thin slices of 1 big onion
1/2 cup peas
1/4 cup French beans cut in to short length
1/3 cup finely cut carrots
1/3 cup finely chopped cauliflower
1/2 tbsp kasuri methi (dried fenugreek)
2 1/2 cup water
1 1/2 tsp salt or to taste
Juice of 1/2 lemon

SERVES: 2-3 people 
PREPARATION TIME: 15 Min
COOKING TIME: 25 Min
TOTAL TIME: 40 Min
* 1 CUP = 237 ML

METHOD:

Making masala paste:

1. Grind all the ingredients in a mixer grinder & keep aside. 

Making Subz Pulao:

1. In a kadai or pan heat oil & lightly fry cashew nuts till golden.
2. Take it out in a bowl & keep aside. 
3. In the same oil put bay leaf (tej patta), thin slices onion. Cook onions till brown in colour stirring intermittently. 
4. Put the prepared masala paste. Saute for 1 min. 
5. Add vegetables - peas, French beans, carrots, & cauliflower. Mix well & sauté the vegetables for 1 min. 
6. Add kasuri methi (dried fenugreek) by crushing it between palms. 
7. Add water & allow it to come to boil on high.
8. Add salt & juice of lemon. 
9. Add soaked rice (remove all excess water & then add). 
10. Once water starts to boil again lower flame & cook for 12-15 min covered with lid till all water dries up.
11. Switch off the flame, cover with lid & allow it to steam for 5 min. 
12. Garnish subz pulao with fried cashew nuts (prepared in step 1-2 above) & serve it hot.
