Crunchy Honey and Almonds Chocolate is a homemade chocolate recipe using caramelized honey and almonds mixed with milk chocolate to give the perfect crunchy chocolatey taste. It is great for gifting & valentine's day. You can also replace honey with caramelized sugar if you prefer. Here we have used almonds but you can use other dry fruits like cashew nuts, walnuts or pistachios! You would need chocolate moulds to give it desired shapes. INGREDIENTS:
For honey caramel almonds mixture (alternatively use sugar caramel):
1 tsp butter
1/4 cup honey
1/4 cup finely chopped almonds (can also use cashew nuts, pistachios or walnuts)
Ghee (clarified butter) for greasing
For making chocolate:
200g milk chocolate at room temperature (Alternatively use dark chocolate)
SERVES: Makes about 250-300g crunchy honey almond chocolates
PREPARATION TIME: 8 Min
COOKING TIME: 5 Min
TOTAL TIME: 13 Min
* 1 CUP = 237 ML
METHOD:
Making honey caramel almonds mixture:
1. Add butter & honey in a pan & cook on low flame stirring constantly till brown colour for about 3-4 min.
2. Once colour of honey has changed to nice brown caramel switch off flame.
3. Add finely chopped almonds & mix.
4. Put this mixture on rolling board greased with ghee (clarified butter) & allow it cool down for 2-3 min.
5. After 2-3 min lightly spread it with fingers soaked in water. You can use rolling pin too.
6. Allow mixture to come to room temperature.
7. Crush the mixture in mixer grinder for 1-2 pulse after breaking it with hands. Keep it crunchy with bigger flakes & not make a powder.
8. Keep aside.
Making honey almond chocolate:
1. Melt chocolate in microwave on high for 30 sec.
2. Mix with spoon. It should be free flowing. If required microwave for 20-30 sec on high again.
3. Once chocolate has melted allow it come to room temperature for 4-5 min.
4. Pour prepared crunchy honey-almond mixture & mix well.
5. Take your choice of chocolate mould & clean it with tissue paper.
6. Fill the chocolate mould with mixture.
7. Clean the edges with tissue paper.
8. Lightly tap to level it.
9. Allow to set in fridge for 30 min. Alternatively keep in freezer for 10 min.
10. To unmold turn it over on a plate & light tap.
11. Easy to make crunchy honey almond chocolate is ready!
