Gujarati Handvo is a delicious Indian savoury cake recipe made using rice, lentils & vegetables. The batter is fermented overnight or 8 hours before cooking. Handvo is a recipe from Gujarat where it is consumed the most as a snack or main meal. In this recipe learn how to bake it in Pan without traditional sand oven or OTG. Vegetables are added to batter before cooking - you may add bottle gourd, corn, peas, etc. Do try this recipe.

INGREDIENTS:
Batter:
1/2 cup short grain rice
1/4 cup toor/tuvar/arhar dal/pigeon pea
2 tbsp chana dal/Bengal gram
2 tbsp urad dal/split dehusked black gram
1/4 cup dahi/curd/yoghurt
1/4 tsp haldi/turmeric powder
1/4 cup water or as required
1 cup grated dudhi/lauki/bottle gourd
1/4 cup corn/maize/makai (optional)
2 tbsp oil
2 tsp ginger-chillies/adrak-mirchi paste
1 tsp garlic/lasun paste
1/2 tbsp salt/namak or to taste
1/2 tsp Eno fruit salt
Tempering:
4 tbsp oil
1/4 tsp mustard seeds/rai
1 dried red chilli/sukhi lal mirchi
1/8 tsp asafoetida/hing
1/2 tsp sesame seeds/til
SERVES: 2-3 people
PREPARATION TIME: 15 Min
COOKING TIME: 40 Min
TOTAL TIME: 55 Min
OTHER TIME: 14 hours (Soaking 5 hours, Fermenting 9 hours)
* 1 CUP = 237 ML
METHOD:
Making batter:
1. Soak rice, pigeon pea, Bengal gram & split black gram together for 4-5 hours.
2. Drain water & grind along with curd, turmeric powder & water to slightly coarse consistency.
3. Transfer batter to big bowl.
4. Cover & allow it ferment in a dark place for 8-9 hours.
5. Mix well.
6. Add grated bottle gourd & corn (optional) & mix.
7. Add oil, ginger-chillies paste, garlic paste, salt & mix.
8. Add Eno fruit salt & pour little water over it.
9. Mix in one direction till Eno white disappears.
Making tempering & cooking handvo:
1. Take 3 tbsp oil in a pan.
2. Add mustard seeds & allow it to crackle.
3. Add dried red chilli, asafoetida, sesame seeds & mix.
4. Pour batter in pan.
5. Level the batter with spoon.
6. Cover & cook handvo for 20-25 min on low flame.
7. After 20 min check & if it has not turned brown at base cook for 5 min more.
8. Switch off flame & place a large plate over pan & turn it upside down.
9. Place pan on cook top & start flame on low.
10. Pour 1 tbsp oil in pan.
11. Gently slide handvo in to pan to cook on other side.
12. Cover & cook for 15-20 min on low flame.
13. Switch off flame.
14. Take handvo out in plate & cut to pieces
15. Gujarati handvo in pan is ready! Serve hot with green chutney.

TIPS:
1. While grinding add more water if required. Consistency of batter should be slightly coarse.
2. Add Eno fruit salt just before cooking handvo. Eno makes handvo fluffy & soft.
