Methia Masala & Instant Mango Pickle Recipe - अचार मसाला और इंस्टेंट आम का अचार रेसिपी - Priya R - Magic of Indian Rasoi

Methia Masala is famous Gujarati pickle masala made form split fenugreek seeds & split mustard seeds. It is used in pickling vegetables & fruits. It is easy to make at home. You can store this masala in air tight container for 1 month at room temperature or for 6 months in fridge. Also in this recipe learn how to make instant mango pickle out of this masala by combining raw mangoes & masala. INGREDIENTS:

Pickle Masala (Methia Masala):

1/4 cup oil (any oil)
1/2 cup split mustard seeds/rai kuria
1 tbsp split fenugreek seeds/methi kuria
1 1/2 tbsp salt
1/2 tsp asafoetida
1/8 tsp turmeric powder
1/4 cup red chilli powder

Instant Mango Pickle:

2 raw mangoes (totapuri) - 200g approx
2 tbsp pickle masala

SERVES: Makes 240g Pickle/Methia Masala
 & 224g Instant mango pickle
PREPARATION TIME: 10 Min
COOKING TIME: 2 Min
TOTAL TIME: 12 Min
* 1 CUP = 237 ML

METHOD:

Pickle Masala (Methia Masala):

1. Heat oil in small pan till it gives out smoke & then switch off flame & allow to cool down for 10 min.
2. Grind masala in mixer grinder - split mustard seeds/rai kuria, split fenugreek seeds/methi kuria to slightly powder form.
3. Take out mixture in a big bowl.
4. Add salt, asafoetida, turmeric powder, red chilli powder & mix well.
5. Pour heated & cooled down oil in this mixture & Mix well.
6. Methia masala/Gujarati Aachar/Athanu Masala is ready. You can store this in air tight container at room temperature for 1 month/in fridge for 6 months.

Instant Mango Pickle:

1. Wash & cut mangoes in small piece & put it in a bowl.
2. Add 2 tbsp pickle masala or as per taste.
3. Mix well.
4. Cover & allow resting for 1 day.
5. Instant Mango Pickle is ready to eat. Store it in fridge for 2-3 days.
