Noodles Dosa is a delicious party starter made using dosa batter & stuffed with spicy noodles. Variations include even spicier schezwan sauce. It is an Indo Chinese fusion dish especially served at marriage & functions. You can make this dosa instantly - it does not require fermented batter as the base batter is made from semolina & gram flour. You can also serve it to kids for snacks. INGREDIENTS:
Batter:
1 cup rava/semolina
2 tbsp besan/gram flour
1 1/2 cup water
Salt to taste
Noodles stuffing:
2 tbsp oil
1/2 cup sliced onion (1 medium onion)
1 finely chopped green chilli
4 grated cloves of garlic
1/2 inch grated ginger
1/4 cup thin & long cut carrots
1/4 cup sliced capsicum/bell pepper
1/2 cup thin chopped cabbage
Salt to taste
1 tsp Chinese seasoning (alternatively use 1/4 tsp black pepper)
1 tbsp tomato ketchup
1 tsp soy sauce
1/2 tsp red chilli sauce
1/2 tsp green chilli sauce
2 cups boiled noodles (1/2 pack raw noodles)
1 tsp vinegar
2 tbsp finely chopped coriander leaves
Dosas:
Oil for greasing
SERVES: Makes 9-10 medium sized spring dosa
PREPARATION TIME: 10 Min
COOKING TIME: 30 Min
TOTAL TIME: 40 Min
OTHER TIME: 15 Min (Resting time: 15 Min)
* 1 CUP = 237 ML
METHOD:
Making batter:
1. Take rava/semolina & besan/gram flour in a big bowl.
2. Add 1 cup water little by little & prepare a mixture.
3. Add salt & mix.
4. Cover & allow it to rest for 15 min.
5. Check dosa batter - if it feels thick we may add up to 1/4 - 1/2 cup water & mix.
Making noodles stuffing:
1. Heat 2 tbsp oil in kadai.
2. Add sliced onion, chopped green chilli, grated garlic, grated ginger, cut carrots. Mix & cook on high flame for 30 sec.
3. Add sliced capsicum/bell pepper, mix & cook again for 30 sec.
4. Add chopped cabbage & salt. Mix & cook for 1 min.
5. Add Chinese seasoning, tomato ketchup, soy sauce, red chilli sauce, green chilli sauce. Mix well.
6. Add boiled noodles & mix.
7. Cook for 1 min & switch off flame.
8. Add vinegar & chopped coriander leaves. Mix.
9. Noodles stuffing is ready!
Making dosas:
1. Heat dosa tava & lightly grease with oil.
2. Wipe tava with wet cloth.
3. Spread batter using ladle starting from centre & circling round towards outside to give dosa shape.
4. Keep flame medium & lightly brush oil/spread oil over dosa.
5. Cook till slightly crispy.
6. Turn over dosa & cook on other side.
7. Turn over & put 2 tbsp stuffing in centre.
8. Close from both sides, then take it out in plate, cut & serve hot.
9. Prepare remaining spring dosa in same way.
10. Spring dosa/fancy dosa is ready! You can serve this at party or for evening snack to kids. Serve it with coconut or green chutney or sauce.
TIPS:
1. You may also use regular dosa batter for preparing dosa.
2. Consistency of batter should be same as rice/urad dal dosa batter.
3. You can also add green part of green onions instead of coriander leaves or add both in stuffing.
4. You can make small, medium or large dosa.
