Mango Shrikhand is a delicious Indian dessert where Shrikhand is mixed with mango pulp to give it a delicious & sweet taste. It is also called Amrakhand & is famous in Maharashtra & Gujarat. Shrikhand is prepared with hung curd (yoghurt) mixed with sugar. This is a quick recipe, however, pre-preparation is required for making hung curd. It tastes best with a puri (round fried wheat flour bread). It is also famous dish served at Gujarati/Maharashtrian weddings during summer season. Do try this delicious dessert recipe this summer.

INGREDIENTS:
500g fresh curd (yoghurt)
Pieces of 1-2 mangoes
1/4 cup sugar - adjust as per taste & sweetness of mango
1/8 tsp cardamom powder
Saffron milk (1/8 tsp saffron soaked with 1 tbsp milk for 30 min)
4-5 drops mango emulsion (optional)
SERVES: Makes 350 g mango shrikhand approx
PREPARATION TIME: 5 min
OTHER TIME: 8 h (time for preparing hung curd)
TOTAL TIME: 8 h 5 min
* 1 CUP = 237 ML
METHOD:
1. Keep a fine strainer (suitable for milk) over a big bowl & put curd over it.
2. Keep it covered in fridge for 8 hours or overnight so that water from curd is separated in bowl below.
3. Discard the water. Mash the hung curd with spoon.
4. In a mixer grinder jar blend pieces mango & sugar to fine pulp.
5. Mix mango pulp & hung curd.
6. Add cardamom powder & saffron milk.
7. Mix everything. Use a hand whisker so that any lumps are removed.
8. Add mango emulsion (optional) & mix.
9. Chill mango shrikhand in fridge for 30 min & then it is ready to eat!
10. Store mango shrikhand in fridge for 2-3 days. It tastes best with puri!
TIPS:
1. In place of fine strainer you can use a muslin cloth.
2. Do not add water while blending mango.
