Choco vanilla whipped cream cake is a perfect birthday cake recipe. It is in teddy bear shape so that your little one will surely love this cake. In this recipe learn how to make this cake using non dairy whipping cream from scratch. Non dairy whipping cream is light and can hold peaks much better and is the preferred way to do cake icing in India. Do try this cake today & make those special moments count with cake made at home!

INGREDIENTS:
6 inch & 8 inch chocolate cake - baked, cooled & refrigerated for 6 hours2 ½ cups non - dairy whipping cream - whipped to stiff peaks
100g grated dark chocolate
5-6 drops navy blue gel food color or any color of your choice
Water for brushing
10 inch cake board
For Chocolate Ganache:
50g dark chocolate20g fresh cream
SERVES: approx 1.25kg cake
PREPARATION TIME: 30 min
COOKING TIME: 30 min
ASSEMBLING TIME: 2 hours
RESTING TIME: 6 hours
* 1 CUP = 237 ML
METHOD:
For Chocolate Ganache:
1. Microwave dark chocolate (roughly chopped) & fresh cream for 30 seconds.
2. Mix & let it rest (covered) for 4 hours at room temperature.
3. Chocolate Ganache is ready for piping.
For Assembling Teddy Bear Cake:
1. Cut 2 teddy bear ears using a round cutter or a glass from 6 inch chocolate cake.
2. Slice each ear in to 2 layers. Keep aside.
3. Slice 8 inch chocolate cake in to 2 layers.
4. On a 10 inch cake board. Apply non dairy whipped cream towards one side.
5. Place the bottom layer of cake & press it gently.
6. Place the bottom layers of 2 ears above 8 inch cake & adjust.
7. Spread water evenly on cake using a brush. You can also use sugar syrup.
8. Spread non - dairy whipped cream using piping bag starting from the centre of the cake and spreading towards the edges.
9. Spread grated dark chocolate evenly.
10. Put the top layer of cake over it with bottom side up.
11. Spread water evenly on cake using a brush.
12. Cover the top of the cake with whipped cream and then spread on sides walls of the cake.
13. Using a palette knife smoothen the cake on sides and top.
14. Refrigerate the cake for at least 3 hours.
15. After 3 hours, trace the mouth using a cutout & toothpick.
16. Using free-hand, trace the nose.
17. Using a big piping nozzle, trace the eyes.
18. Draw eyeballs using free-hand.
19. Trace ears as well.
20. Fill piping bag with white whipped cream & small open star tip nozzle. Fill the mouth area (leave the nose), inner side of the eyes, inner side of the ears.
21. Fill piping bag with blue whipped cream (or any color of your choice) & small closed star tip nozzle fill the remaining area on the face & ears.
22. Cover the side walls too with blue whipped cream & small closed star tip nozzle
23. Fill the remaining area of eyes & nose with dark chocolate ganache & small open star tip nozzle.
24. Teddy Bear Cake for kids birthday party is ready!
25. Refrigerate for at least 3 hours before cutting.
