Almond Semolina Cookies is a delicious bakery style eggless cookies make using easily available ingredients at home - wheat flour, almonds & clarified butter (ghee), making it delicious and chewy. It is very simple recipe which uses few ingredients and most importantly it is made of whole wheat flour making it healthy for kids. These cookies can be easily termed as Indian style Nankhatai biscuit as it uses ghee and tastes just like Punjabi Pinni! INGREDIENTS:
⅔ cup whole wheat flour
¼ cup semolina/rava
¼ cup icing sugar
¼ cup almonds - grind to powder
⅓ cup clarified butter/ghee
1 tbsp desiccated coconut or almond clipping for garnish
Pinch of salt
SERVES: Makes 8 medium size almond semolina cookies
PREPARATION TIME: 10 min
COOKING TIME: 30 min
TOTAL TIME: 40 min
* 1 CUP = 237 ML
METHOD:
1. In a bowl, sift whole wheat flour.
2. Add semolina, icing sugar, almonds powder and salt. Mix well.
3. Add clarified butter and knead into a soft dough gently. Do not overmix it .
4. Cover & refrigerate for 15-20 min.
5. After 20 min, divide this dough gently into 8 equal portions and flatten each ball slightly.
6. Dip each cookie in desiccated coconut. Alternatively use almond clipping for garnish.
7. Place these cookies on a baking sheet (lined with parchment paper or aluminium foil) at some distance giving them space to expand.
8. Bake in preheated oven at 160C for 25-30 min until golden crust forms on top.
9. After being baked, remove from the oven & transfer immediately to a cooling rack. Handle gently as these cookies will turn crispy only after cooling down.
10. Once cooled to room temperature, store in airtight container for upto a week.
11. Enjoy Almond Semolina Cookies with a cup of tea or coffee! It can be also served to kids with a glass of milk or as a lunch box snack.
Hi Priya hi , I love ur recipes ..I need a little help...just wanted to know if I double the recipe and bake them the time would get increase ? And how much ...how to calculate....pls let me know ...sure semolina recipe is a great hit..and everybody loves it so much....
