INGREDIENTS:
1 cup handvo flour
2 tbsp oil
⅛ tsp turmeric powder
2 tbsp curd
1 cup water (approx)
¼ cup coarsely ground wheat flour
1 tbsp jaggery (optional)
½ cup grated bottle gourd
¼ cup grated carrot
½ cup grated beetroot (raw)
½ tbsp green chillies & ginger paste
6-7 grated garlic cloves or 1 tsp garlic paste
1 - ½ tsp salt or to taste
2 tbsp boiled corn
¼ cup chopped coriander leaves
½ tsp eno or ¼ tsp baking soda
For tempering:
3 tbsp oil
½ tsp mustard seeds
¼ tsp asafoetida
1 tsp sesame seeds
1 tsp red chilli powder
SERVES: 4-5 persons
PREPARATION TIME: 20 min
COOKING TIME: 45 min
TOTAL TIME: 65 min
* 1 CUP = 237 ML
METHOD:
1. In a bowl, add handvo flour, oil, curd & turmeric powder.
2. Add 1 cup water or as needed gradually to make thick batter like dosa.
3. Cover with a plate/lid and let it ferment for 7-8 hours or overnight.
4. After 7-8 hours, check the consistency, if required add about 1/4 cup water.
5. Add wheat flour, jaggery, bottle gourd, carrot, beetroot, green chillies & ginger paste, grated garlic cloves, salt, boiled corn & coriander leaves
6. Add eno & mix well.
7. Transfer handvo mixture in greased 7-8 inch cake mould.
8. For tempering, heat oil in a small pan.
9. Add mustard seeds and allow it to crackle.
10. Add asafoetida & sesame seeds. Turn off the flame.
11. After 2 min, add red chilli powder.
12. Pour this tempering over the handvo mixture.
13. Bake at 180C for 40-45 min in preheated oven until it turns light golden brown.
14. Once baked allow it to cool completely & then cut into desired pieces.
15. Serve hot with green chutney and/ketchup.
