INGREDIENTS:
For Mini Idli Batter:
1 cup instant rice idli mix
⅓ cup spinach puree (add 1 green chilli while making puree)
1 cup water (approx) + ½ tsp water
1 tbsp curd
½ tsp eno fruit salt
For Tempering:
2 tbsp oil
½ tsp rai/mustard seeds
¼ tsp jeera/cumin seeds
5-6 curry leaves
2 tbsp roughly cut peanuts & cashew nuts
½ tsp til/sesame seeds
SERVES: 2-3 people
PREPARATION TIME: 15 Min
COOKING TIME: 15 Min
TOTAL TIME: 30 Min
* 1 CUP = 237 ML
METHOD:
For Mini Idli:
1. In a bowl, take instant rice idli mix, spinach puree & curd. Mix well.
2. Using approx 1 cup water make thick batter.
3. Allow it to rest for 10 min. Meanwhile heat water in idli steamer.
4. After 10 min, mix & check batter consistency, if required add water. It should be dropping consistency.
5. Add eno fruit salt & pour ½ tsp water over eno & mix well.
6. Grease mini idli plates with oil.
7. Spoon batter in the mould & transfer the mould into hot water steamer.
8. Place the lid on & steam on high flame for 12-15 min.
9. After 12 min, mini idlis are steamed remove the mould from the steamer.
10. Allow mini idlis to cool for 5 min.
11. Demould using a knife or spoon.
For tempering:
1. Heat oil in a pan.
2. Add mustard seeds & allow it to crackle.
3. Add cumin seeds, curry leaves and peanuts & cashew nuts.
4. Mix & cook till it turn lightly golden in color.
5. Add mini idlis & sesame seeds.
6. Mix & cook for 1 min.
7. Switch off flame & serve mini hariyali idli with chutney or ketchup.
Tips:
1. If you do not want to make rice idli mix at home, you can also you ready to use rice idli mix from market.
2. If you do not want to use eno fruit use you can alternatively use ¼ tsp baking soda but I prefer eno for best results.
