INGREDIENTS:
1/2 Cup Wheat Flour + for dusting
1/2 All Purpose Flour (Maida)
2 Tsp Ghee (Clarified Butter) + more for roasting & application
1/4 Tsp Sugar
1/4 Cup Milk
4 Tsp Chopped Mint Leaves
4 Tsp Chopped Coriander Leaves
½ Tsp Black Pepper Powder
Water for kneading dough as needed
Salt to taste
SERVES: Makes 4 medium size paratha
PREPARATION TIME: 15 min
COOKING TIME: 10 min
TOTAL TIME: 25 min
* 1 CUP = 237 ML
METHOD:
1. In a bowl mix, wheat flour, all purpose flour, salt, 2 tsp ghee, sugar & milk.
2. Using water to knead medium stiff dough.
3. Cover & let it rest for 10-15 mins.
4. After 10-15 mins, knead for 2 mins & make it smooth.
5. Divide into 4 equal portions.
6. Take 1 portion & roll into thin disc.
7. Apply ghee lightly & sprinkle black pepper powder.
8. Spread 1 tsp mint leaves & 1 tsp coriander leaves.
9. Fold half & press lightly.
10. Apply ghee on half portion & sprinkle wheat flour. Fold again to make a triangle & press lightly.
11. Pick up all corner & seal to make a ball again.
12. Roll into large disc.
13. Apply Ghee & sprinkle flour.
14. Fold zigzag & make a ball again.
15. Roll into a slightly thick disc.
16. Heat Tawa & cook on both sides till brown spots appear.
17. Apply 1 Tsp Ghee on both sides & roast well.
18. Once done apply Ghee generously & it is ready to serve.
19. Repeat steps 6 to 18 for all four parathas.
20. Serve hot! With Dal Fry Tadka or Raita
