Cheese Aloo Patties Frankie is a delicious flavourful roll with veggie patties (sausage) in the inside. The roll is prepared adding mayo, cheese, spices and masala inside. This Mumbai street food is very delicious and can be a perfect one meal dish or snack. You can prepare the rotis and patties in advance about a day earlier or same day and can roll the frankie at your convenience later (store in fridge if required). The rotis are made from mix of wheat flour and refined flour and partially cooked in advance before assembling. Do try this street food recipe at home today!

INGREDIENTS:
Chilli Vinegar:
1 finely cut green chilli
2 tbsp white vinegar
Roti (Outer layer):
¼ cup all purpose flour
½ cup wheat flour
Little salt
Aloo Patties (Inner sausage):
2 boiled & mashed potatoes
2 tbsp finely chopped coriander leaves
2-3 grated garlic cloves
½ tsp ginger chilli paste
¼ tsp red chilli powder
⅛ tsp turmeric
¼ tsp cumin powder
¼ tsp dry mango powder
¼ tsp garam masala
½ tsp coriander powder
Salt to taste
⅓ cup bread crumbs
Oil for frying
Assembling Frankie:
2 tsp butter
2 tsp mayonnaise
2 tsp chilli garlic sauce
4 tsp finely chopped onion
2 tsp finely chopped coriander leaves
Little chaat masala / frankie masala
2 tsp chilli vinegar
4 tbsp grated cheese

PREPARATION TIME: 20 min
COOKING TIME: 25 min
TOTAL TIME: 45 min
* 1 CUP = 237 ML
METHOD:
Chilli Vinegar:
- In a bowl mix finely cut green chilli & white vinegar.
- Keep aside.
Roti (Outer layer):
- Knead medium stiff dough with all purpose flour, wheat flour & little salt.
- Rest for 15-20 min.
- Divide dough into 4 equal parts.
- Roll thin roti using rolling pin and board.
- Roast on high on flat tava for few sec on both sides.
- Transfer to casserole.
Aloo Patties (Inner sausage):
- Mix mashed potatoes, finely chopped coriander leaves, grated garlic cloves, ginger chilli paste, red chilli powder, turmeric, cumin powder, dry mango powder, garam masala, coriander powder, Salt, & bread crumbs.
- Adjust bread crumbs if mixture is loose by adding more.
- Divide into 4 parts & prepare patties (flat hot dog style sausages).
- Shallow fry or deep fry in hot oil on high flame on both sides till golden.
- Remove on paper napkin.
Assembling Frankie:
- Roast roti on flat tava with ½ tsp butter on both sides.
- Heat Aloo Patties if required on same tava.
- Transfer to plate & apply ½ tsp mayonnaise on inside of roti.
- Apply ½ tsp chilli garlic sauce.
- Put patties slightly on side of roti.
- Spread 1 tsp finely chopped onion, ½ tsp finely chopped coriander leaves, little chaat masala / frankie masala, ½ tsp chilli vinegar, 1 tbsp grated cheese over it.
- Roll the roti and wrap in silver foil/plastic.
- Wrap paper napkin around it & serve.
- Prepare all frankie in same way.
