INGREDIENTS:
½ cup dessicated coconut
¼ cup fresh cream/ghar ki malai
¼ + ⅛ cup full fat milk
¼ cup sugar
1-2 pinch cardamom (elaichi) powder
4-5 drops mango emulsion
8 cloves/laung/laving

SERVES:8 pedas
PREPARATION TIME:5 min
COOKING TIME: 15 min
TOTAL TIME: 20 min
* 1 CUP = 250 ML
METHOD:
1. In a Kadai or Pan without turning on the flame add desiccated coconut, milk, and fresh cream and mix well.
2. Switch on flame on low to medium and cook for 4-5 min till milk and cream dries up. Stir constantly to avoid burning or sticking.
3. Once the mixture thickens add sugar and mix well.
4. Stirring constantly cook for 4-5 min on medium flame.
5. Once the mixture is cooked it will thicken up and leave the sides of the pan turning into a ball.
6. Cook for 1-2 min and then switch off the flame.
7. Add cardamom powder and mango emulsion and mix well.
8. Transfer the mixture to a bowl and allow it to cool down. Once cooled down put it in a refrigerator for 1 hour.
9. Make lemon small balls from this mixture and give an impression on top with a finger giving shape of apple and put it in plate.
10. Using toothpick or small brush and red food color make multiple strokes on each ball to make it look like apple.
11. Place cloves upside down in each ball.
12. Apple Coconut Pedas are ready to serve! As this is a fresh cream mithai you can consume it in 3-4 days and refrigerate it for best results.
