INGREDIENTS:
½ cup all purpose flour
¼ cup cocoa powder (unsweetened)
¼ tsp baking powder
½ tsp baking soda
⅓ cup castor sugar
¼ cup softened salted butter (approx 45g)
2-3 tsp milk at room temperature
¼ cup chopped dark chocolate or chocolate chips
1-2 tbsp dark chocolate chips
SERVES: Makes 10-12 brookies
PREPARATION TIME: 15 min + 30 min
COOKING TIME: 10 min
TOTAL TIME: 55 min
* 1 CUP = 237 ML
METHOD:
- In a bowl sieve, all purpose flour, cocoa powder, baking powder & baking soda.
- Add butter and castor sugar & mix with a spoon.
- Using milk knead into a soft with light hands.
- Add chopped dark chocolate & mix gently.
- Cover & Chill the dough in the fridge for 30 min.
- Pre-heat oven at 160C.
- After 30 min, make 10-12 lemon size balls from the dough & place it directly on parchment paper line baking tray.
- Garnish with dark chocolate chips. Do not flatten the cookies as it will spread while baking.
- Bake on 160C in pre-heated oven for JUST 10 min.
- After 10 min, cool the brookies in baking tray for 15-20 mins.
- Soft & chewy eggless brookies are ready to enjoy!
- Store in airtight container for 3-4 days.
