Amla Ki Goli is a tangy and spicy candies made from Indian Gooseberries. They are good for digestion and used as paachak Goli. Being rich in vitamin c amlas are good for health too and ideal to eat in winters. These candies are very easy to make at home and young and old alike will enjoy it. INGREDIENTS:
250gm or 9-10 medium sized indian gooseberry/amla
300 ml water approx
150gm or 1 cup jaggery - roughly chopped
¼ tsp carom seeds
1 tsp roasted cumin powder
¼ tsp asafoetida
½ tsp dry ginger powder
½ tsp black pepper powder
1 tbsp dry mango powder
½ tsp black salt
½ tsp salt
2 tbsp powdered sugar
Ghee for greasing
SERVES: Approx 188g Amla ki Goli
PREPARATION TIME: 5 min
COOKING TIME: 15 min
TOTAL TIME: 20 min
* 1 CUP = 240 ML
METHOD:
- Wash amla 2-3 times in water and take it in pressure cooker.
- Add 1 glass water and cook on high flame for 2 whistles. Allow the pressure to release on its own.
- Drain the water completely and allow amla to cool down.
- Using knife cut into pieces and discard the seeds.
- Grind amla in mixer grinder to a smooth paste.
- Heat a non-stick pan and add amla paste to it.
- Add jaggery and cook for 3-4 mins on medium to slow flame till jaggery melts and half of the moisture evaporates. Keep stirring frequently.
- Add carom seeds, roasted cumin powder, asafoetida, dry ginger powder, black pepper powder, dry mango powder, black salt & salt. Mix well.
- Cook this mixture for 2-3 min more till leaves the pan sides.
- Remove it in a bowl and allow it cool completely.
- Grease palms with some ghee and make small golis or balls from this mixture.
- Coat the balls with powdered sugar.
- Allow it to set for 30 min.
- Store at room temperature for 10-15 days or in fridge for 6 months.
- Delicious Amla Goli or Gata Gat is ready to enjoy!
