INGREDIENTS:
For Kebab:
1 tsp oil
½ cup peas - boiled & coarsely crushed
2 tbsp spinach puree
¼ cup boiled & mashed potato (1 small size)
2 tbsp grated paneer
1 tsp coarsely ground fennel seeds/saunf
½ tsp dry mango powder
¼ tsp mint powder or 1 tbsp chopped mint leaves
¼ tsp black pepper powder
1 tsp kasoori methi
1 tsp green chillies & ginger paste
1 tbsp chopped coriander leaves
Salt to taste
For Slurry:
¼ cup maida or corn flour
¼-⅓ cup water - prepare thick batter
Salt to taste
Other Ingredients:
1 cup fresh bread crumbs
Oil as needed for cooking
SERVES: Makes 12-13 Hariyali Kebab
PREPARATION TIME: 20 min
COOKING TIME: 15 min
TOTAL TIME:35 min
* 1 CUP = 240 ML
METHOD:
For Kebab:
- In a heat oil, add peas, spinach puree, potato, paneer, saunf, mango powder, mint powder, black pepper powder, kasoori methi, green chillies & ginger paste & salt to taste.
- Mix well and cook for 2-3 min till moisture evaporates. Switch off the flame.
- Add coriander leaves & mix.
- Remove it in a bowl & allow it to cool completely.
- Make 12-13 equal size balls from this mixture.
For Slurry:
- In a bowl mix maida & salt.
- Add water gradually to make semi-thick batter like for pakoda.
For Assembling:
- Dip kebab balls in maida slurry. Shake off excess.
- Immediately coat it with bread crumbs.
- Repeat the process for all the kebab balls.
- Refrigerate for at least 30 min or until needed.
- Heat appam pan. Grease it lightly.
- Place prepared balls in the cavity & cook on low flame till golden on on side. Drizzle oil as needed.
- Once done, turn the balls over & let it cook on other side till golden.
- Press the balls lightly with the back of the spoon so it cooks on the edges as well.
- Once done, remove the kebab balls in a plate.
- Serve hot with Green Chutney or Ketchup!
Tips:
- To make fresh bread crumbs, crush 4-5 bread slices in mixer grinder.
- You can store this kebab balls after shaping them in freezer in airtight container for upto 15 days. Fry or cook as needed.
- If you don't have appam pan, you can use regular pan or tawa. If you want you also deep fry this kebabs.
