INGREDIENTS:
For Strawberry Crush:
180-200g strawberries
1 cup sugar
¾ cup water
1 tsp lemon juice or ⅛ tsp citric acid
¼ tsp strawberry emulsion (optional)
For Strawberry Milk:
1-2 tbsp strawberry crush
200 ml chilled milk
SERVES: Makes 300ml strawberry crush
PREPARATION TIME: 5 min
COOKING TIME: 10 min
TOTAL TIME: 15 min
* 1 CUP = 240 ML
METHOD:
For Strawberry Crush:
- Wash strawberries well with water & pat dry it. Remove stems & chop it roughly.
- Grind strawberries to a smooth puree in a mixer grinding jar. Do not use any water. Keep aside.
- In a pan add sugar & water. Keep the flame high and allow it to come to boil. Make sure sugar dissolves completely.
- Add lemon juice & mix.
- Lower the flame and cook for 8-10 mins. Stirring intermittently.
- After 8 min, check syrup consistency. It should be thick. To check put a drop of syrup on a plate and tilt it vertically, it should not come flowing down. If it doesn’t syrup is ready!
- Add strawberry puree to the syrup & let it come to boil on high flame.
- Cook for 2 min on lower flame. Then switch off the flame.
- Add ¼ tsp strawberry emulsion (optional) & mix well.
- Transfer strawberry crush to a bowl and allow it to cool down completely.
- After its cooled down, transfer strawberry crush to a sterilised bottle & store in fridge for 3 months or in freezer for 4-5 months.
For Strawberry Milk:
- In a glass add strawberry crush.
- Add chilled milk & mix well.
- Strawberry Milk is ready to serve!
