Butter Cookies is a delicious bakery style eggless cookies is a very simple recipe and uses few ingredients. You can make this biscuits anytime or for festivals like Diwali, Eid, Christmas, etc. In this recipe, I have shown a technique where you can pipe these cookies into roses shape which makes it very appealing to look it. And addition of jam drops makes it irresistible. You can store these cookies in an airtight container for up to 7 days. Do try this recipe today!

INGREDIENTS:

43g maida/all purpose flour
7.5g cornflour
⅛ tsp baking powder
43g salted butter (room temperature)
43g icing sugar
¼ tsp vanilla essence
3 tbsp milk approx
2 tsp mixed fruit jam (room temperature) - optional
Big star icing nozzle 
piping bag
Butter paper

SERVES: Makes approx 160g butter cookies
PREPARATION TIME: 10 min
COOKING TIME: 30 min
TOTAL TIME:40 min + resting time
* 1 CUP = 237 ML


METHOD:

  1. In a bowl, sieve maida, corn flour & baking powder. Keep aside. 
  2. In another bowl, whisk butter and icing sugar until smooth & pale in color. 
  3. Add vanilla essence & milk. Mix well. 
  4. Add sieved dry ingredients and mix gently with spatula. Do not use hands to mix. 
  5. Fit star nozzle into piping bag and fill the prepared dough in piping bag. 
  6. On baking tray lined with butter paper, pipe rosettes by pressing the piping bag in small circular motion applying firm pressure. 
  7. Pipe all the rosettes on the baking tray at equal distance. 
  8. Keep this baking tray in refrigerator for 30-40 min to allow butter to set.
  9. After 30 min, preheat oven at 180C for 10 min. Both rodes on. 
  10. After 40 min, bake these cookies at 180C for 25-30 min till light golden crust forms on edges.
  11. Remove from oven and allow it to cool on baking tray itself for 15-20 min. 
  12. Store in airtight container for up to 7 days. 
  13. Crunchy on the outside and melt in mouth inside Butter Cookies are ready to enjoy!
